This is quite possibly the GREATEST drink ever! It’s easy to drink, slightly sweet, has a nice bit of spice, and most importantly, it’s so well-balanced!
A few weeks ago I had dinner and drinks at a new restaurant that just opened up, Luce. It’s an awesome place, if you’re in San Diego, it’s definitely worth checking out. Luce is not your average neighborhood restaurant, the food is absolutely incredible, the atmosphere is cozy, and the drinks are plentiful.
I was meeting someone there and I showed up a bit early, I decided to have a cocktail at the bar while I was waiting. The friendly bartender welcomed me and informed me of their specialty cocktail, a spiced mule. I happen to love a good Moscow Mule and was throughly intrigued. I graciously ordered their spiced mule and was completely blown away, it was one of the best drinks I’ve had in a long time. They were pretty strong and after 3 of these I couldn’t exactly remember what she said was in it, here’s my attempt at a recreation.
First, a little Mule 101. Moscow Mules are are typically made with vodka, ginger beer, lime juice, bitters, and sometimes mint. It’s a fabulous, fun and sophisticated cocktail that usually comes in a copper mug or a high ball.
Luce serves theirs in a copper mug – I think it makes them taste better!
A Kentucky Mule is made with bourbon, ginger beer and lime juice. Today’s concoction is a kicked up version of the Kentucky Mule.
Ingredients: 1 750ml bottle of Maker’s Mark 3 green apples 3 cinnamon sticks 1 1/2 tsp ground cinnamon Dash of ground ginger 2 whole vanilla beans Ginger Beer 3 limes
Spiced Bourbon Recipe:
Slice apples into eights, in a large glass container, pour the entire bottle of bourbon, add apples, cinnamon sticks, ground cinnamon and ground ginger.
Slice vanilla bean down the center and scrape out the vanilla seeds. Add seeds and vanilla bean to bourbon.
Cover with plastic wrap and let sit for 24-48 hours.
Spiced Kentucky Mule:
In a medium glass, fill with ice, add 1 oz. of spiced bourbon (depending on how strong you like it), fill glass with ginger beer, add a splash of lime juice and dust with ground cinnamon. Using a spoon, stir to incorporate and enjoy!
