Light and Refreshing Breakfast Quinoa with Fresh Fruit


Summer is here and I couldn’t be more excited, I’m still on my health kick (minus falling off the wagon a few times with a slice of pizza or two here and there), but I’m not letting it get me down. The weather has been absolutely amazing and I’ve been trying to enjoy it as much as possible, every chance I get.

I’ve been doing quite a bit of running and exercising lately, however they say you can’t out exercise a bad diet, so this morning, I decided to make something light, healthy and refreshing! This dish fits that profile to a tee, mint and lemon with just a hint of sweetness over fresh fruit is absolutely wonderful!

Quinoa isn’t just for dinner, it’s so versatile, you can even dress it up for breakfast. It’s naturally gluten-free and packed with protein, it goes perfectly with fruit for a healthy and filling breakfast. Click here for more information about this super grain.

Ingredients:

1/2 Cup Quinoa

1 Cup Water

1 Banana

1/2 Cup Strawberries

1/4 Cup Blueberries

1 Tbsp Lemon Juice

1 Tbsp honey

1 Tbsp mint

Recipe:

To prepare quinoa, bring water and quinoa to a boil, reduce heat and let simmer until quinoa is fully cooked and all of the liquid has been absorbed.​

Remove quinoa from stove and let cool.

Slice fruit, chop mint and set aside.

Mix honey and lemon juice very well in a small bowl.

Once the quinoa has cooled, combine fruit, quinoa, lemon juice and mint and mix well
