Simple and Creamy Tomato Soup
Once upon a time, my dad, sister and I all worked for the same company. Although we worked in different departments, my dad and I worked in THE SAME OFFICE, eek! It wasn’t all that bad, actually. Occasionally he would take me to lunch, the area we worked in had lots of great restaurant choices, so he was always taking me some where great and introducing me to his favorite dishes. I’d definitely say I get my love of food from him.
One of the things he introduced me to was the Nordstrom Cafe and their amazing tomato soup. If you’ve ever tried it, you know what I’m talking about. Liquid crack… you just can’t get enough. It’s so good, I’m certain it’s made almost entirely of butter and cream.
I decided to try my hand at a healthy version and here it is! With just a few simple ingredients, you’ve got all of the great flavor you love about tomato soup and the satisfaction of knowing exactly what went into it.Ingredients:
2 Tbsp olive oil 2 Cloves garlic 2 Shallots 2 Small carrots 1 Can San Marzano tomatoes 1/2 Cup chicken broth 1/2 Cup milk 2 Tbsp heavy cream 1 Tsp thyme 1 Tbsp fresh basil
Mince garlic, shallots, and carrots and set aside.
In a medium sauce pan over medium heat, add olive oil, garlic and shallots and cook for 1-2 minutes until translucent.
Add carrots and cook for 5-7 minutes until carrots are completely soft.
Add tomatoes and cook for 5 minutes.
Turn off heat and let tomatoes cool slightly. Once cooled, place tomato mixture in a blender, food processor or Vitamix and pulse until completely smooth.
Place tomato sauce back in your sauce pan over medium heat.
Stir in chicken broth.
Add milk and heavy cream. Season with salt and pepper to taste.
Add chopped basil and thyme and enjoy!
This tomato soup is simple and delicious, it goes great with grilled cheese. I recommend gluten free bread and smoked gouda!
