No Cook Overnight Oats


My friends ask me all the time about what I eat or for healthy recipes. It’s really no secret, I’m always more than happy to share. I eat this recipe, pretty much every weekday. It’s perfect because I feel like no matter how early I wake up, I’m always rushing to get to work. This is the PERFECT breakfast or snack when you’re on the go.

Truth is, eating healthy and saving money isn’t that difficult, you just have to get a little creative and put in a little prep work.

I think the biggest misconception about eating healthy is that it’s expensive. It really doesn’t have to be. A bag of Gluten Free Rolled Oats from Trader Joe’s is about $4-5 and it comes with approximately 22 servings. That’s about $0.23 per serving (I sometimes only do 1/4 cup which is still plenty to fill me up and the bag goes much further than 22 servings). You could buy one treat from Starbucks or have breakfast for almost a month! You can definitely do it.

This recipe is great because all this yummines is under 350 calories! It doesn’t get better than that! I should also add that it’s high in fiber, which helps you to feel fuller longer (no mid-morning hunger cravings here). On top of being low calorie, low fat and high in fiber, the thing I love most about overnight oats is that they are EXTREMELY versatile. You can mix and match different flavors and fruits to your liking. I usually make my overnight oats with banana, fresh blueberries, and a sprinkle of raw almonds. When I’m out of fresh fruit, dried fruit and nuts work great too!

Ingredients:

1/2 cup gluten free oats 1/2 cup vanilla coconut milk 1/2 cup water (or sub 1/2 cup water and 1/2 cup coconut milk for 1 cup vanilla coconut milk for added sweetness) 1 tbsp chia seeds 1 tbsp chopped raw almonds 1 tbsp dried cranberries Recipe:

  1. Combine oats, chia, milk and water in a sealable container and refrigerate overnight (yes-it’s that simple). If you like it sweeter add 1 tbsp honey.

  2. In the morning, top with almonds and cranberries (or fresh fruit of choice) and ENJOY!
