Doesn’t the sight of that red and green fruit just scream SUMMER!? Watermelon is great at BBQs, in a salad, or just on its own. When we were kids we used to eat it right off the rind and spit the seeds at each other 😉
Confession: I sometimes have a hard time finishing an entire watermelon by myself. I cut a portion off then cover the rest, and it just doesn’t seem as fresh in the days that follow. Maybe it’s just me. My problem is now solved. This recipe is a great way to use it up quickly!
Not only is watermelon the perfect summer treat, according to the health section of HowStuffWorks, Watermelon is really good for you and provides a number of different benefits:
“Watermelons are an excellent source of several vitamins: vitamin A, which helps maintain eye health and is an antioxidant; vitamin C, which helps strengthen immunity, heal wounds, prevent cell damage, promote healthy teeth and gums; and vitamin B6, which helps brain function and helps convert protein to energy.
Tomatoes have been highly touted as a great source for lycopene, a powerful antioxidant that helps fight heart disease and several types of cancer — prostate cancer in particular. Watermelon, however, has the highest concentrations of lycopene of any fresh fruit or vegetable.”
It always feels great to eat something that tastes so good and does good for your body, too!
This was a great afternoon pick me up or cool me down on a hot day, but I bet this would be fabulous and easy to whip up at my next gathering!
3 Cups Watermelon (approx. 1/2 of a medium watermelon) 1/2 Cup Coconut Water 1 Handful of mint (1/4 cup loosely packed) 1 Cup ice
1. Place all ingredients in a blender (or Vitamix) and pulse until you have a smoothie-like consistency. Serve as is or over ice.
